As an American, we do not have the Sunday roast tradition that other countries have.
But I think we should definitely try to appreciate the taste.
Cook a roast, with potatoes, vegetables and gravy.
The next day?
Dice up your potatoes, carrots, cabbage, brussels sprouts and peas, carrots, etc. Heat up a pan and coat with oil, then dump in the diced vegetables.
Once your veggies have crisped up, use a large spatula to flip the dish over and crisp up the other side.
Cut into slices and serve with your favorite topping, HP Sauce, ketchup, Horseradish, etc.
