Recipe: Banitsa

 


I have a friend, from my time in the AECO industry, who shared a Banitsa recipe with me. She is originally from Bulgaria, but has been all over and seen all things and spoken all languages. When she recommends anything, from travel to food to software, I listen! 

Her recipe called for Sirene cheese, but I ended up using Feta instead.

It's a lovely, savory dish, with a flakey finish. 

I couldn't decide whether to make into a roll and coil it, or layer it like a lasagna... so I did both! (see image above)
